No Fail Scones
What You Need:
2 1/3 c flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
½ cup of butter cut into cubes
1 egg split the yolk from the white and keep both
1/3 c Buttermilk (or mix 1/3c milk with 1 tsp lemon juice)
What You Do:
Preheat your oven 400 degrees.
Mix together the flour, baking powder, baking soda, and salt. Cut in the butter.
In a second bowl cream together the egg yolk and buttermilk. Slowly add your wet mixture to the dry mixture. Your dough will be crumbly. Once everything is incorporated pour your dough crumbles onto a floured surface. Knead your dough until you form one large dough ball.
The key to awesome scones is knead that dough like you mean it. Show it you mean business. Lightly kneading the dough will lead to a dryer scone.
Once you have showed that dough you’re the boss use a rolling pin and flatten the ball of dough into approximately ½ inch think circle. Cut into 8 triangles. I use a pizza cutter.
Place cut scones on a baking sheet.
In another bowl with the egg white, whip the egg white until frothy. Spread the frothy egg white on the top of each of the scones before baking.
Bake for 12 minutes.
