This dish is easy peasy and everyone in the family will love it. My family is hard to please when it comes to dinner time and this is a new addition to our monthly meal plan.
1lb Smoked Sausage
2 Cups white rice cooked to the packaging directions
1 16ounce can of sweet yellow corn
½ cup green bell pepper diced
½ cup yellow cooking onion diced
½ cup beef broth
1 tbsp tomato paste
1 tsp olive oil
Green scallions for garnish
Salt and pepper to taste
In a sauté pan with high sides put you oil on high heat. While your oil is heating up slice your sausage on a diagonal and add to your screaming hot pan. This creates a nice crust to your sausage. Once all of your sausage is browned remove it from the pan and place off to the side. Turn down to medium heat. To your empty pan add you diced peppers and onions and cook until they are soft about 2-3 minutes. Once your veggies are soft add in your beef broth and tomato paste and stir until its incorporated and simmer for another 2-3 minutes. Add in your cooked rice, can of corn (drained) and sausage & salt and pepper to taste. Stir again to mix everything together. Once everything is mixed allow to sit on medium-high heat for about 3-5 minutes to allow a slight crust to form on the bottom. Once the crust begins to form scrap the sides of the pan, turn off heat and you are ready to serve. Garnish with green scallions.
