I am always one for forgetting an ingredient or two when it comes to cooking for my family and this night was like no other and I forgot to pick up the tortilla chips our kids use when having Tuesday Tacos, a Snyder family favorite. As I desperately scrolled through Pinterest to find another dinner option similar to our usual tacos that didn’t include tortilla chips or taco shells (no one likes those anyway) I across a post about stuffing your baked potatoes with all of the fixin’s for tacos. Wow-wee what an indulgent dinner. It was a big hit with the Hubs and a big hit for the Snyder Minis!
Here’s what you need:
- 2lbs Ground meat of your choice (we are particular to ground turkey)
- 6 potatoes (baked in the microwave using the family favorite setting)
- 2 Taco Seasoning packets
- Taco Fixin’s (we like lettuce, green bell pepper, cherry tomatoes, sweet onion, and shredded mozzarella cheese)
Brown your ground meat in a skillet. Add two packets of taco seasoning (no skimping on the seasoning friends, you’ll thank me for it later.) While your meat is browning put your potatoes in the microwave on family favorite setting for baked potatoes and let your microwave go to work. While all of that is going on I dice up all of my fixin’s for the tacos! Once your potatoes are ready to serve take a knife and cut down the potato length wise about ¾ of the way through. (Chef’s trick: squeeze either side of the potato to open up the slit enough to stuff.) Once your potatoes are prepped, get to stuffin’. Enjoy!
